The Azerbaijani cuisine is not well known outside the country. Therefore it’s an important point for visitors what to expect in this country from the culinary point of view. First of all, the temperatures are very high from spring to autumn, so there is a cuisine compared to the Eastern Mediterranean cuisine like in Turkey. The national dish is pilaf a kind of rice dish in different variations. There is often served barbeque with Kebab from lamb or chicken accompanied by fresh tomatoes, cucumbers and grilled eggplants. The typical traditional bread is made in a loam oven; it sticks at the fringe until its ready baked with coal heating. There are heaps of international restaurants to be found in Baku as well, from fast food, to traditional restaurants for example in the Old Town and some high class restaurants, the quality level is surprisingly high and very tasty.
The main drink beside of water is Ayran and tea. There are also alcoholic drinks available such as beer, Azeri wine and vodka. For desert there is a wide range selection of sweets like baklava, nuts and dried fruit.
